Double Chocolate Coca-Cola Cake - The Glamorous Gourmet

I really dislike how difficult it is to save recipes posted on Facebook. One day (i'm telling you!) they will hook up with Pinterest to make all our lives so much easier! Found this and MUST try it!
Double Chocolate Coca Cola Cake
1 cup Coca Cola (real thing, not diet)
1/2 cup oil
1 stick butter
3 Tablespoon cocoa
2 cups sugar
2 cups flour
1/2 teaspoon salt
2 eggs
1/2 cup buttermilk
1 teaspoon baking soda
1 teaspoon vanilla
Frosting:
1 stick butter
3 Tablespoon cocoa
6 Tablesppon of cream or milk
1 teaspoon vanilla extract
3 3/4 cups confectioner's sugar
In a saucepan, mix Coca Cola, oil, butter and cocoa and bring to a boil. In another bowl, combine the sugar, flour and salt. Pour the boiling Cola mixture over the flour mixture and beat well. Add the eggs, buttermilk, soda and vanilla and beat well. Pour mixture into a greased and floured 13 x 9 inch baking pan and bake at 350 degrees or 20 to 25 minutes. Remove pan. Cool for about 10 minutes before frosting.
Frosting: In a saucepan, combine the butter, cocoa, and milk. Heat until the butter melts. Beat in the remaining ingredients and spread on the cake while it's still warm. Enjoy

The Glamorous Gourmet - Overnight French Toast (No Mush)

Okay so, I realized that my blogs about food aren't that great. I basically just give ya'll a recipe and a picture. However, a priceless teenager once told me, "Recipe posts aren't comic book heroes, mom. They don't need an origin story". Did I mention he hates reading through the back story on a food blog? So, yeah, I'm with him. Let's keep it simple.

This overnight french toast is great and it doesn't turn out mushy!

The Toast
6 eggs
2 cups heavy cream
1/4 cup sugar
2 tsp vanilla
1/4 tsp cinnamon
1/2 tsp cinnamon extract (optional)
1 loaf Texas toast style bread cut into 1 inch cubes (or other thick bread- will equal about 8 cups)

The Sauce
3/4 cup butter
1 1/3 cup brown sugar
3 T corn syrup
1 tsp maple extract (optional)

Combine first 5 (6) ingredients in a medium bowl. Place the bread into a 13x9 baking dish and pour the egg mixture over top. gently press down the bread so that the liquid comes up over the tops and soaks in. Cover with foil and refrigerate overnight.

The following morning, preheat the oven to 350 degrees and transfer the bread to a lightly greased cookie sheet (with sides!) using a slotted spoon to leave behind the excess liquid. Spread it out. Cover with foil and bake for 20 minutes. While it's baking prepare the sauce by combining the 4 ingredients in a saucepan and heating on medium until it bubbles. After the timer is up, uncover the pan and pour the sauce over the bread. Bake uncovered another 20 minutes. Sprinkle with cinnamon while warm. Allow to cool significantly before serving as the sauce gets very hot and is scalding hot for at least 10-15 minutes.

A Reminder to My Future Self

That moment when you realize your own worth...followed rapidly by the discovery of just how short you've been selling yourself and for just how long you've been doing it.

Dearest Me,
 
     Never forget that moment. I'm writing to you just in case down the road you lose your way (yet again). Though, I pray my admonishment proves unnecessary. So often it's hard to listen to or trust others. But, this is me and I'm writing this to you because I think that you've finally gotten to a place where you have learned to trust me above all others. I implored you previously to hold onto your pearls. Yet, you mistrusted me and chose not to listen to sense. I beg you, never make such a mistake again. Credit me, yourself, with the intelligence due and choose wisely. Be mindful of where you spend yourself and all the good things you have to offer the world. Make sure you're getting a bargain; don't let yourself get swindled. You're more than just good enough when there are no other options. You're high quality, like finery one would purchase if they but had the means. Once bought, you should expect to be the favorite. You should expect to get cared for like the luxury investment you are!

Silly girl! Don't waste your time and energy traveling a dead end street. Reign in that foolish curiosity! Whatever lies there is of little value, regardless of what it is, because it lies still at a dead end. Once you are there, once you achieve it and see it, what is left for you to do but either cease traveling,  cease growing, cease the journey or to turn around and travel back from where you came, if such a place still exists? For the roads in life's journey are not static like the roads of the literal world. So far you've not seen this for yourself. This truth has not manifest itself in your journey, blessed as you are.

In any case, I have seen it. I have traveled to the end and back. I can tell you surely, what lies down that road and you don't want it, though it may be tempting to allow yourself, allow us, to desire it. What feels warm and alive inside you will be returned cold and hard. The words which please your ears will and should disgust your intelligence. There is a reduction of you, and all your wonder and worth, to a trinket, carried around for adornment, yet, assigned no sentimental value. Really, you must know that you are an amazing treasure, which should be valued not just in word but in deed. Though, at times deeds may be misguided, at the very least you deserve to be openly claimed and, dare I say, revered as such a treasure. You deserve more than lip service my dear and the occasional crumb of acknowledgement of one or two of all your may virtues.

Promise me you'll not sip from such poison, but rather drink deeply from the refreshment of the bounty of praise set before you. Don't pay a kingdom for a hovel, dear girl. You were made a queen. Remember your making, the place which you, indeed we, began from and the lofty place you now enjoy. It is folly to deny yourself such things and renounce their noble origin. You need not search for true valuation and honor. For, you well know where these will be given to you. And you cannot fault the source if at times you feel taken for granted. For, have you not been guilty of such offenses yourself? I promise you, we have.

I hope, quite earnestly, that these words call to mind the events and the awakening which inspired them. Having recalled these things, I wish that you might take heed, for our sake. For how many times must a lesson be learnt, my dear soul?

The Glamorous Gourmet - Kentucky Derby Pie Cupcakes (Wanna Be Gigi's)

Ok so here's what happened. I was browsing through pinterest quite aimlessly when I stumbled upon a pin for "Kentucky Derby Cupcakes". The picture made me want to lick the monitor! YUM! So I repinned and moved on to crochet ideas, home decor and the occasional outfit. Less than 28 days later (wink) I WANTED something sinful to soothe my soul. Immediately, I thought of the luscious picture. A dark cake topped with white creamy goodness, a sprinkling of nuts and dripping with what could only be caramel and chocolate. I mean LOOK AT IT!



So I happily clicked to see what it was going to take to make these babies MINE and what?!?! It's a link to the website for Gigi's Cupcakes. DIE pinterest you have failed me! No recipe. Just that picture and a taunting description of what this level of heaven contained. Never deterred I Googled the crud out of it. I seached high and low for a copycat Gigi's Cupcakes Kentucky Derby Pie Cupcakes Recipe. Nada. Zip. Absolutely nothing!

To add to my pain, there isn't an actual Gigi's Cupakes store within a two hour drive of my house. I have never been to one, nor have I ever tasted the cupcakes which had become the object of my lust. So armed with the description I set out to find a way to blindly recreate this thing. Now, I've already confessed that I have never tasted the original. Therefore, this can't really be called a "copycat" recipe...yet. It's just a wanna be, BUT it is delicious! My husband is a self professed cake hater and in spite of himself had to declare this recipe the champion of everything, EVERYTHING in my extremely varied repertoire of baked treats. Now if anyone has actually had the real Gigi's Cupcake please let me know how this stacks up in the comments section. But you won't likely be disappointed even if the taste is different because it's still freakin' amazing! Well worth the effort.

So here we go with the recipe:

The Cake
adapted from this recipe

3 cups minus 6 tablespoons all purpose flour
6 tablespoons cornstarch
1 teaspoon baking powder
½ teaspoon baking soda
1 teaspoon salt
1 cup (8 ounces) butter
1½ cups (10½ ounces) granulated sugar
½ cup (3¾ ounces) firmly packed brown sugar
4 eggs, at room temperature
¼ cup Jim Beam Kentucky Bourbon (YEAH! Baking with Booze Baby!) *a 375ml bottle will last about 3 recipes*

1 tablespoon white vinegar
Enough milk to make 1 cup
1 cup chopped pecans
1/4 cup mini semi sweet chocolate chips


Center an oven rack and preheat the oven to 350 degrees. Grease a muffin pan or use paper liners. To make the cake, sift together the flour, cornstarch, baking powder, soda, and salt in a bowl, then whisk the mixture by hand to ensure that the ingredients are well mixed.

In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and sugars together on medium-high speed until fluffy, about 5 minutes. As you make the batter, stop the mixer frequently and scrape the paddle and the sides of the bowl with a rubber spatula. Blend in the eggs one at a time. Place the tablespoon of vinegar into a glass measuring cup and fill to the one cup line with milk. Let that sit until it thickens slightly and is curdy (about 5 minutes). Combine the bourbon and milk mixture in a small bowl. Feel free to have a nip of bourbon at this point be sure to leave some though ;) With the mixer on low speed, add the flour mixture in three parts, alternating with the milk-bourbon mixture in two parts, beginning and ending with the flour. After each addition, mix until just barely blended and stop and scrape the bowl. Stop the mixer before the last of the flour has been incorporated and complete the blending by hand with a rubber spatula. Stir in the pecans and chocolate chips. Now I know you're going to lick the bowl and probably make a face (unless you've been hitting the bottle and can hang like us Georgia girls!). I promise the bourbon mellows in the oven ;) In fact, it gets so mellow you'll need to make a bourbon glaze to top the cakes with!

Spoon the batter into the prepared muffin pan, filling each cup about 2/3 of the way. Place the pan in the oven and bake until the cake is golden and springs back when touched, 20 minutes.

In the meantime, make the bourbon glaze. Don't skip it or skimp on it or there won't be any dang Kentucky in your cupcakes! In which case, you may as well not even bother. Seriously.

Bourbon glaze

6 tablespoons (3 ounces) butter
¾ cup (5¼ ounces) granulated sugar (or brown if you like)
¼ cup Jim Beam Kentucky Bourbon (Yup more booze!)

Combine the butter, sugar and bourbon in a small saucepan over low heat just until the butter melts and the sugar dissolves, whisking to combine. Now understand the less you cook it the more alcohol is retained in the glaze. Theoretically  you could cook the sugar and butter then just stir in the bourbon; but if you're serving kids you might feel impelled to really cook the stuff...maybe.

Remove from oven and turn the cupcakes out of the pan. Place on a baking sheet and perforate the tops with a fork. Brush each generously with bourbon glaze while still warm.


Now while those all cool, it's time for...

Toppings

Make your life a tad easier and buy some caramel topping like Smucker's or something.

Chop some more pecans.

Cream Cheese Frosting 

1 pkg. (8 oz.) cream cheese, softened
1/4 cup butter softened
1 tsp. vanilla
3-4 cups sifted powdered sugar

Basically, just mix it all together in a bowl. Start with 3 cups of sugar and if you want it thicker add more until the desired consistency is achieved. Thicker will do better when you add on the other toppings. You may want to refrigerate this until your ready to use it

Chocolate Ganache

8oz bitter-sweet baking chocolate chopped (or roughly what's left in your bag of mini chips)
1 cup of heavy cream


Bring the cream to a simmer on the stove top. Place chocolate into a heatproof bowl and pour simmering cream over top. Let it sit to melt a bit then whisk it up until it's combined. Now this stuff doesn't thicken much at room temperature so you need it to be a nice drizzling consistency while it's still warm. If it isn't add more chocolate. Ok, that can sit out and cool.

Time to frost these lovelies! I use a sandwich bag with the corner cut off, but a spoon would work too! Once frosted, drizzle with caramel. Put the ganache in a sandwich bag and cut the corner off or take your chances with a fork and drizzle over the cakes. Finally, sprinkle with chopped pecans unless your serving Mr. Picky then leave 'em off like I did here :p



The remaining booze is yours to do with as you wish ;) Now go eat some cupcakes!

1 *JAGER BOMB* boil 1 cup red bull (in place of water), add black cherry or orange jello, 1 cup jager.

2 *MARGARITA* boil 1 cup water, add 3 oz pkg lime jello, 4 oz tequila, 4 oz sweet & sour margarita mix. sprinkle with salt just before firm.
(substitute watermelon jello for lime for a melon margarita)

3 *RUM & COKE boil 1 cups coke, mix in dark cherry jello add 1 cups light rum

4 *MIMOSAS* this one varies from the normal method Since champagne isn't as strong as liquor, cut the
water out of this one. boil one cup champagne, mix orange jello 2 min, add one more cup champagne and a splash of OJ.

37 *ANKLE BREAKER* 1 cup of boiling water. Dissolve 1 envelope of Lime Jello (3 oz size) and stir until fully dissolved. Add 1/2 cup of cold water, 1/4 cup of 151 Rum, and 1/4 cup of Cherry Brandy. Stir well and cool before pouring into jello shot cups.

38 *FIRECRACKER 2* 3/4 cup of boiling water. Dissolve 1 box of Orange Jello and stir until fully dissolved. Add 1/4 cup of cold water, 1/3 cup of Sloe Gin , and 1/3 cup of Spiced Rum and 1/3 cup of 151 Rum. Stir well and cool before pouring into jello shot cup

39 **KOMANIWANALAYA** 2 cups of boiling water. Dissolve 1 box of Pineapple Jello and 1 box of Cranberry Jello (both 3 oz size) and stir until fully dissolved. Add 1 cup of cold water, 1/2 cup of Amaretto, and 1/2 cup of 151 Rum. Stir well and cool before pouring into jello shot cups.

40 *RAIN MAIN* 1 cup of boiling water. Dissolve 1 box of Orange Jello (3 oz size) and stir until fully dissolved. Add 1/4 cup of cold water, 1/2 cup of Bacardi 151, and 1/4 cup of Melon Liqueur. Stir well and cool before pouring into jello shot cups

41 ADAM AND EVE 3/4 cup of boiling water. Dissolve 1 box of Lemon Jello (3 oz size) and stir until fully dissolved. Add 1/2 cup of cold water, 1/4 cup of Brandy, and 1/4 cup of Pomegranate Liqueur and 1/4 cup of Gin. Stir well and cool before pouring into jello shot cups.

42 ALABAMA SLAMMER 3/4 cup of boiling water. Dissolve 1 package of Lemon Jello (3 oz) and stir until everything is completely dissolved and then add 1/3 cup of cold water. Next, add 1/3 cup of Amaretto, 1/4 cup of Southern Comfort, and 1/3 cup of Sloe Gin. Mix thoroughly until everything is well combined and the carefully pour into jello shot cups. Chill for 3 to 4 hours and serve.

43 ALL NIGHTER 1 cup of boiling water. Dissolve 1 box of Cherry Jello (3 oz size) and stir until fully dissolved. Add 1/2 cup of cold water and 1/2 cup of Watermelon Vodka. Stir well and cool before pouring into jello shot cups.

44 APPLE PIE 1 1/2 cups of boiling water. Dissolve 2 boxes of Lemon Jello (3 oz size) and stir until fully dissolved. Add 1 cup of cold water, 1/2 cup of Light Rum, 1/2 cup of Sweet Vermouth, 1/4 cup of Apple Brandy and 1/4 cup of Grenadine. Stir well and cool before pouring into jello shot cups.

45 BANANA BOAT 1 cup of water. Dissolve 1 box of Pineapple Jello (3 oz size) and stir until fully dissolved. Add 1/2 cup of cold water, 1/4 cup of Coconut Rum , and 1/4 cup of Banana Liqueur. Stir well and cool before pouring into jello shot cups.

46 BANANA SPLIT 1 cup of boiling water. Dissolve 1 box of Strawberry Jello (3 oz size) and stir until fully dissolved. Add 1/4 cup of cold water, 1/4 cup of Vodka, and 1/4 cup of Banana Liqueur and 1/4 cup of Creme de Cacao. Stir well and cool before pouring into jello shot cups.

47 BAT OUT OF HELL 1 cup of boiling water. Dissolve 1 package of Orange Jello (3 oz) and stir for at least 2 minutes until fully dissolved. Add 1/2 cup of Red Bull, 1/4 cup of Rumand 1/4 Blue Curacao. Stir until well combined and cool before pouring into jello shot cups.

48 BERMUDA TRIANGLE 1 cup of boiling water. Dissolve 1 box of Orange Jello (3 oz size) and stir until fully dissolved. Add 1/2 cup of cold water, 1/4 cup of Spiced Rum and 1/4 cup of Peach Schnapps. Stir well and cool before pouring into jello shot

49 BLACK CAT 1 cup of boiling water. Dissolve 1 package of Raspberry Jello (3 oz) and stir until fully dissolved. Add 1/4 cup of cold water, 1/2 cup of Black Vodka, and 1/4 cup of Chambord. Stir well and wait until the liquid is about room temperature before pouring into jello shot cups.

50 BLACK WIDOW 1 cup of boiling water. Dissolve 1 package of Grape Jello (3 oz) and stir until fully dissolved. Add 1/4 cup of cold water, 3/4 cup of Blackberry Vodka and 1/8 teaspoon of Ginger Powder. Stir well and cool slightly before pouring into jello shot cups. For a schnazzy garnish, drop a single blackberry in each cup before chilling

51 COUGH DROP 1 cup of boiling water. Dissolve 1 3 oz package of Strawberry Jello and stir until fully dissolved. Add 1/2 cup of cold water, 1/2 cup of Jagermeister. Stir well and cool before pouring into jello shot cups.

52 CRYPTINI 1 cup of Hot Coffee. Dissolve 1 envelope of Knox Gelatin and stir until fully dissolved. Add 1/3 cup of Iced Coffee, 1/3 cup of Vodka, and 1/3 cup of Kahlua. Stir well and wait until the liquid has cooled before pouring into jello shot cups.

53 FRENCH TICKLER 1 cup of boiling water. Dissolve 1 package of Orange Jello (3 oz) and stir until fully dissolved. Add 1/4 cup of cold water, 1/4 cup of Cinnamon Schnapps and 1/2 cup of Vodka. Stir well and wait until the liquid has a chance to cool before pouring into jello shot cups.

54 HARVEY WALLBANGER 1 cup of boiling water. Dissolve 1 package of Orange Jello (3 oz) and stir until fully dissolved. Add 1/4 cup of cold water, 1/2 cup of Vodka and 1/4 cup of Galliano. Stir well until completely combined and wait until the liquid has cooled before pouring into jello shot cups.

55 JUICY FRUIT 3/4 cup of boiling water. Dissolve 1 box of Pineapple Jello (3 oz size) and stir until fully dissolved. Add 1/4 cup of cold water, 1/3 cup of Vodka, and 1/3 cup of Melon Liqueur and 1/3 cup of Peach Schnapps. Stir well and cool

56 JAGERMASTER 1 cup of boiling water. Dissolve 1 box of Orange Jello (3 oz size) and stir until fully dissolved. Add 1/2 cup of cold water, 1/4 cup of Jagermeister, and 1/4 cup of Amaretto, and a just a splash of Grenadine. Stir well and cool before pouring into jello shot cups.

57 JAGERMONSTER 1 cup of boiling water . Dissolve 1 package of Orange Jello and stir until fully dissolved. Add 1/4 cup of cold water , 1/2 cup of Jagermeister, and 1/4 cup of Grenadine. Stir well and cool before pouring into jello shot cups.

58 LETHAL INJECTION 2 cups of boiling water. Dissolve 1 package of Orange Jello (3 oz) and 1 package of Pineapple Jello (3 oz) and stir at least 2 minutes until completely dissolved. Add 1 cup of cold water followed by 1/4 cup of Amaretto, 1/4 cup of Coconut Rum, 1/4 cup of Dark Rum and 1/4 cup of Spiced Rum. Stir well and wait until the liquid has cooled before pouring into jello shot cups.

59 LONG ISLAND ICED TEA  1 cup of boiling water. Dissolve 2 packages of Lemon Jello (3 oz) and stir until fully dissolved. Add 1/2 cup of Cola and 1/2 cup of cold water. Now get ready to add the alcohol - 1/2 cup of Gin, 1/2 cup of LightRum, 1/2 cup of Vodka and 1/2 cup of Tequila. Merely Me - Just Everything!

Ok! So... wow! First blog entry of 2012! My friend Dawn has been busy blogging everyday for national blog month or something like that and I'm just getting around to this one. But it's still January so I'm not slacker right?? Yeah. Anyway, so here I am 2011 is done, thank God and I'm knee deep in 2012 :)

I'm still in college, all online classes this semester and I'm so glad! I hated going to campus and juggling kids and home life etc. Of course at some point the pace is really gonna pick up because...

FAST FORWARD! ---->>---->>---->> It's now April 2013 and the pace is in high gear!!! Ok so I came across this draft while I was looking over my personal blog. I had a class assignment to start a blog and blog about my experience with blogs and how I might use blogs in the classroom. I read the beginnings of this post and was just in awe of how things have changed for me and everyone, even Dawn!

I'm currently wrapping up my sophomore year at AASU, when I started this post I was attending Savannah Tech and had now idea that there even was such a thing as a sophomore in college! Online classes are a thing of the past...this semester I drive to Savannah Monday - Thursday for class (4 are on campus and 1 by God's grace is online) and have a 30 hour field observation at Lewis Frasier Middle School in Hinesville. I no longer feel like a stay-at-home-mom and sometimes I really miss it!

My sister Samie started college and is scheduled to PCS back to Georgia with her family. The chasm that was created in our family is mended for the most part and continues to mend well. James moved back to Georgia and started college as well. Richard now has bilateral cochlear implants whereas he only had the left side done when I started this. Dawn...well what can I say? She lost like a bunch of weight and is not only no longer plus sized she's like a size four! She doesn't blog as much, but she's as busy as ever. Things are on the upswing for all of us! What a difference a year makes!

The Sassy Scholar - Jane Austen Term Paper


          For The Love of Jane Austen

          I never fail to be amazed when I mention my love of Jane Austen novels in conversation only to be met with a tell-tale blank stare indicating that the person with whom I am speaking has no idea who she is. I then proceed to rattle off at least three of the five completed Austen novels by name. I am fully aware, that even well-read individuals have rarely heard of her epistolary work Lady Susan or her incomplete novel Sanditon, named so by Austen’s family and “completed” by numerous authors, so I do not mention those. Probably about half of the time this ends with me ranting about how Jane Austen is one of the most celebrated English authors in history, because she is. In fact, she has been referred to as the first great woman novelist (Bagnuolo), because she is.
           
Born in 1775, Jane Austen was the daughter of a clergyman and had seven siblings, only one of whom was a sister. She was brought up in an environment in which her father encouraged education of his daughters as well as his sons. Austen was allowed the use of her father’s library and he encouraged her writing by maintaining a supply of books, paper, and pens. Later, he even attempted to get one of her works published, but without success. Jane was said to have been very close with her father, and especially close with her sister Cassandra. Readers see glimpses of this relationship in her novels when they experience the bond between characters such as Elizabeth and Jane Bennett or Elinor and Maryanne Dashwood.  Jane Austen never married. She loved one man, Mr. Tom Lefroy but the two were not permitted to marry because, though Austen was a gentlewoman, her family was not well to do (Alex). Surely, this experience provided fuel for her novels, in which, the heroines always married for love not for money and lovers were united against the odds without regard to fortune or connections or a lack thereof.
Austen was successful because she wrote about what she was familiar with. She wrote about her own era and the society in which she lived. She had a thorough knowledge of the composition and characteristics of the social classes because she lived it. She wrote of places she knew and had experienced. These are what she drew on for inspiration; her surroundings gave birth to her settings and characters (Bagnuolo). Incidentally, one will never see dialogue quoted in one of her novels unless there is a female in the conversation. Austen’s style is to summarize conversations taking place between men and save her detailed dialogue for the ladies. I have always attributed this to keeping with the pattern of working with what was familiar to her. Even though Austen’s work did not gain widespread popularity until long after her death, her contemporaries acknowledged this key ingredient which made her novels so splendid. In a review printed in 1816, the year she released her third novel, Sir Walter Scott wrote, “The author's knowledge of the world, and the peculiar tact with which she presents characters that the reader cannot fail to recognize, reminds us something of the merits of the Flemish school of painting. The subjects are not often elegant, and certainly never grand; but they are finished to nature, and with a precision which delights the reader” (Melani).
This give Austen’s writing an authentic quality that cannot be duplicated. Sanditon makes this point perfectly clear. While every effort was made to complete the work seamlessly, in true Jane Austen style, even meticulous study of her writing could not make up for the lack of firsthand knowledge in the version I read, which was completed by Another Lady. The authenticity was not there and it is obvious to the reader where it disappears.
            “The widespread appeal and popularity of Austen’s novels shows that her work, although written in a different era, addresses issues that are timeless” (Strout et al.). It is interesting to note that her novels are popular, and considered the epitome of romance in spite of being wholesome. Unlike the racy romance novels of our day, her novels never mention sexual encounters, kissing or even touching (Harman). On the contrary, Jane’s novels are written in a time when eloping was wrong and couples were chaperoned and they remain true to those high moral standards. Yet, each one is a page turner, keeping the reader wanting more. At the same time, any of her novels would make a lovely, classic bedtime story for a little girl.
Of course, when I rattle off the names of three of the five Jane Austen novels prior to my rant Pride and Prejudice is always included and always first. It was originally titled First Impressions, but after revising this epic romance Austen had it published in 1813 with the title it bears today. This was her most celebrated and popular novel while she was alive, and though her other works are very popular today Pride and Prejudice still has the largest fan base. Her works generally deal with the same issues and questions, though she explores them from different perspectives, under different circumstances, and with a variety of consequences (Melani). However, Pride and Prejudice has a significantly different theme woven together with the familiar Jane Austen fare and one might say there is a moral to this story. The underlying, serious tone is to be wary of being judgmental and presumptuous.  It is absolute brilliance how Austen teaches readers the folly in pre-judging people based on stereotypes or hearsay, addresses pressing issues such as the importance of duty to society versus duty to oneself, and then marries them both to comical satire in Pride and Prejudice.
The characters are all real and memorable even though not much time is spent describing them. The reader always gets to know Austen’s characters through their speech and actions. Thus, Elizabeth Bennett and Mr. Darcy are one of literature’s most beloved couples and Caroline Bingley is hardly more than a heartless villainess. Mr. Bingley and Jane Bennett are cherished as the sweet unsuspecting couple, Mr. Collins irritates the audience and the rest of the Bennett family makes them laugh.
Austen’s character selection helps tell the story, but it also speaks to the issues. Elizabeth Bennett’s parents are the product of society, it is implied that their marriage, in keeping with the norm was based on the ideals of the world around them, namely money and connections. It is apparent throughout the story that they are ill-suited for one another and they have regrets. The same holds true for Mr. and Mrs. Hurst, while Louisa is wealthy and was able to maintain her social stature in marriage, she is not happy. In this way, Austen makes clear her thoughts on what truly makes a happy marriage.
Mr. Collins represented what society dictated a young woman in the Bennett girls’ position should pursue, a secure income, comfortable home, a husband with a respectable career and eventually a family. His character was deliberately designed to be everything Elizabeth thought was undesirable, in order to expose the ridiculousness of following a culture that would encourage incompatible marriages based on compatible circumstances, in essence putting survival over living. In Regency era England, single men had open access to money. What they did not inherit, they could earn. The only way for a single young lady to get money was to marry it (Newton).
The reader gets another dose of Austen’s money-does-not equal-happiness stance in Lady Catherine de Bourgh and her daughter, Anne. In this case, we see that money does not always equal manners either. Lady Catherine is just plain rude, feeling as though because she is a woman of rank she has a right to be so. Her daughter is sickly and fragile, and they live a very lonely life together other than occasional company.
Mr. Wickham’s character points out the dangers put upon young women of good breeding and fortune, in a society that values both above all else. These young women are set up to be preyed upon by men who seek to advance themselves without earning it. This scoundrel Wickham must have been quite interesting to readers in Austen’s day, when families tended to be more on guard against less-than-worthy girls trying to seduce their sons into marriage for their money. Why would families be less concerned about their daughters being preyed upon in this manner? Men of the day did not need to get married. They could do so if they chose, but it was not a necessity for a man to have a wife. Men made their own money, and moved about as they pleased. (Newton) Society looked upon married and single men indiscriminately. Young ladies, however, needed to marry in order to provide for themselves financially and secure a respectable place in society. Even women of wealth were expected to be married at least once. Spinsters, women who had never married, were looked down upon to some degree regardless of their financial status.
Even with all the flaws of the world she knew up for examination, Jane Austen still manages to entertain readers and endear herself and her characters to them, nearly two hundred years after her death. Her work is extremely popular today and has been translated into over 30 languages including Japanese, Hebrew, Icelandic, Bengali, Tamil, and Telugu. Her complete works are among the most read and beloved books in the English language. Austen’s novels have been either directly made into big screen movies or used in adaptations (i.e. Clueless (1995) adapted from Emma) many times. The Glamorous Gourmet - Shish-Kabowls!

I was on a quest recently for a nice stuffed pepper recipe. My hubbykins had been asking me to try one. Well there are *so many* out there I couldn't choose! I didn't want to make them in the crock pot because I hate soggy peppers and I wasn't sure baking would be any better. I love grilled peppers. Like when hubby makes shish-kabobs. I love shish-kabobs, but the beef is so expensive, we haven't had them in the longest. The only beef I keep around is a couple roasts and ground beef. Which incidentally is the main ingredient in most stuffed pepper recipes...and some how my mind jumped from here to Shish-kabowls! 






















Mix This In A Bowl:
2lbs Ground Beef
1 Packet Onion Soup Mix
1/4 cup Worcestershire Sauce

Cook It In A Skillet With This:
1 cup Dales Seasoning (just pour it over top don't mix)
1/2lb Bacon cut into 1 inch sections

Cook this as you would taco meat breaking up the beef chunks, until it is cooked through. Drain and return to the pan and cook an additional 5 minutes to improve the texture of the bacon. Then transfer it to a large bowl 

And Add:
1 Medium Onion (chopped)
1 Large or 4 Roma Tomatoes (diced)

Mix it up and use it to stuff the peppers. If you halve the peppers or use a small variety these can be finger food. Top each pepper with several Sliced Baby Portabello Mushrooms and grill the bowls for 10 or so minutes until the peppers are tender but still crisp.

The Glamorous Gourmet - Chicken Bellagio

I had this dish at The Cheesecake Factory and I loved the taste and texture so much I was searching the web for a recipe before I finished eating! I came across a recipe here at RecipeLink and it was perfect! I left out the arugula because my husband isn't fond of course greens... I may try to convert him because it does add a certain something flavor-wise to the dish. I have done nothing but crave this all week, but alas I only bought enough of the specialty ingredients to try it once! I won't be making that mistake again...

By way of tips I have these:
1) Fillet your chicken breasts (even if you plan to pound them) you'll get twice as many but they are thin enough to cook through without burning the coating.
2) Use a meat thermometer so that you don't cook the chicken any longer than is necessary. This keeps it moist.
3)Make sure you have plenty of the Garlic Pesto. Even if you don't use it all you can store it in the fridge, but you need more than one recipe worth if you're going to make more than 6oz of pasta and who can feed a family with 6oz of pasta?? If you're lazy or on a budget basil pesto in a jar works just fine. I prefer Classico brand, but that's just me:)
4) Prosciutto is expensive, $14 a pound at my local supermarket. So to keep costs down order it from the deli by the slice. I ordered 10 slices cut very thin and paid $1.29. Of course if you shop for the month you may want get more. I'll be ordering 3 packs of 10 instead of one next month and freezing the other two. Of course I may be going out to get more this weekend     so I can make this again NOW! LOL
5)I did not use the nuts and it still tasted perfect.


So with all that in mind, here's the recipe! Enjoy!


CHICKEN BELLAGIO(Cheesecake Factory copycat recipe)

FOR THE GARLIC BASIL PESTO:
1/2 cup fresh basil leaves, packed
2 Tbsp. freshly grated Parmesan-Reggiano or Romano cheese
2 Tbsp. extra virgin olive oil
1 Tbsp. pine nuts or walnuts (optional)
1 or 2 garlic cloves, minced or microplaned or grated
1/2 tsp. salt
1/4 tsp. black pepper

FOR THE PROTEIN:
2 boneless skinless chicken breasts
4 slices Prosciutto, room temperature

FOR THE BREADING:
1 large egg, beaten
1/4 cup flour
3/4 cup bread crumbs
1 tsp. salt
1/2 tsp. ground black pepper
1 tsp. dried parsley
1 tsp. oregano

FOR FRYING:
4 Tbsp. olive oil or enough to coat bottom of pan with 1/4 in. of oil

FOR THE PASTA:
6 oz. angel hair pasta
2 Tbsp. garlic pesto sauce

FOR THE PARMESAN CREAM SAUCE:
1 cup heavy (whipping) cream
3 Tbsp. garlic pesto sauce
1/3 cup Parmsan-Reggiano
1/2 tsp. salt
1/4 tsp. white pepper

FOR THE SALAD/GARNISH:
1 cup washed arugula
half a cup of shredded or grated fresh parmigiana regianno

To prepare the garlic basil pesto, add all of the ingredients for the pesto to a food processor and pulse until well blended; set aside.

Pound out the chicken breasts one at a time in between two pieces of plastic wrap or in a ziploc bag until flattened out evenly.

In a bowl, mix salt, pepper, oregano, and parsley into the bread crumbs to season.

Coat the breasts in flour, and then dip in the beaten egg, and then into the seasoned bread crumbs. Coat completely flipping the breasts over a few times to completely coat. Refrigerate the breasts on a plate for 15 minutes, uncovered, to get the seasoned bread crumbs to really stick. Remove the Prosciutto from the fridge and allow to reach room temperature for ease of separation.

5Boil the pasta in salted water until done, about 10 minutes. Reduce heat to low until needed.

To prep the parmesan cream sauce, add heavy cream to a saute pan and bring the cream to a simmer, and incorporate the basil pesto. Add salt and white pepper to taste, and as it begins to thicken, add the parmesan cheese and stir vigorously to incorporate it. Continue to stir until it thickens more. Reduce heat to low to keep warm.

Preheat oven to 200 degrees F.

Heat a non stick or well seasoned cast iron skillet over medium low to medium heat. Add olive oil and fry the breasts on the first side until golden brown, about 3 minutes. Using tongs, dip each slice of Prosciutto into the hot oil for 10 to 15 seconds, and then place on each chicken breast (2 for each breast, overlapped). Use a thermometer to insure perfect doneness of the breasts. (I pull mine at internal temp of 150F). Place on plate in oven to keep warm.

TO ASSEMBLE:
Drain the pasta and place in a large bowl. Stir in garlic basil pesto. Place the pasta on a plate. Pour some of the cream sauce over the pasta. Add the chicken breasts with the Prosciutto slices facing upwards. Top the breasts with more cream sauce. Top with arugula. Drizzle the arugula with some extra virgin olive oil.

Home Sweet Home - Finally Banish Kool-Aid Stains!

This tip was so amazing I had to share it *with* pictures! I had stains on my rug for as long as I can remember, and with six kids they multiplied regularly. I'm so thankful I ran across this info on LilDuckDuck.com 

"Mix equal amounts of ammonia and hot water. Spray the stain. Take a towel and place over the stain. Go over the towel with an iron on its highest setting and watch the stain transfer! It was amazing. I did this 5 or 6 times over the stain and it was gone. It was an old stain too! Test in an area first." 

So here is the stain I chose to document for proof that this works

 My poor rag that caught the stain... But on the up side it washed completely away in the laundry :)
 No more Kool-Aid! I also promptly went over my rug with my rug cleaner to clean the whole thing and suck up the stinky ammonia :p
I also would like to add that you're going to want to open the window (and doors!) and throw a fan on because this is quite noxious. I should have expected it, I mean ammonia is pungent as it is and we are heating it up and turning into a vapor, but it caught me off guard. So I'm sharing a heads up :)

Just A Quickie...

I love the new Blogger app for Android, but the down side is it's easy to forget what I have started blogging about, say in a waiting room, and actually come back and finish it. Another problem arises when I'm ready to post and I don't have a signal because then I have to actually remember to post the entry later. This is an obvious operator error. So thank you for bearing with me :)

Also you will notice that I no longer use my children's actual names in my entries and I have gone back and edited older posts as well. A fellow blogger (and mom) suggested this to protect my children considering that blogs are public, and it seemed kind fun to give them "code names" so I figured why not?

So that's what's been going on in my world...We now return to your regularly scheduled blog :p

Munchkin Mania - Putting the Pieces Together

Things are coming together in munchkinland and am I ever glad for it! I was beginning to think I was losing my touch. I had adolescents trying to get kicked out of AP classes and assert themselves in defense of their rights as individuals (yes it was really that deep) all the while ADD was running rampant two hallways over and everyday after 3pm there was pandemonium at my house.

Progress reports came home and for the first time in a long time I didn't need to look heavenward except to say "thank you". Bookworm is making a wicked comeback in his advanced language arts class and is actually looking forward to getting another book for his next book report. He's chomping at the bit to go to the big library in the city now that he has a card. I think that may come in handy when motivation bottoms out again...and it probably will. Maybe not, one can hope...but I'm a realist.

Ace is bringing up his language arts grades after an academic standoff earned him his first ever grade below "A". Adjustments were made...I guess you could say there was a peace conference and a treaty was signed in which both parties were cooperative and flexible. He has since been back on the acadenmic fast track where he usually hangs out. Now art class is a different blog, entirely!

Peach as usual shone like a star which makes me proud because she is super busy and while that could harm her grades she is able to maintain balance.

Little Bear recently resumed his medicine for ADD which really helps all the other methods of "treatment " work a whole lot better. I wouldn't have believed it if you told me it had such an impact on him, but going over a month without it was taking its toll in and out of the classroom. He was sad and frustrated.  He had a sad face nearly everyday on his school behavior chart. His grades were pitiful, work came home half done or poorly done.  From the outside looking in it seemed as though he couldn't spell or do math or anything, one would think he had a learning disability. His teacher actually asked me what had changed and I had to tell her he doesn't have his medicine right now. At home with his siblings? Forget it, they were all plotting his demise!

It's been two weeks since he resumed treatment and Little Bear is doing fantastic. Happy faces everyday...EVERYDAY! His classwork from last week seemed to belong to another child! A's! All his work...math, spelling, vocabulary all of it earned an A! Yesterday afternoon he sat coloring all evening because he's discovered he's good at it. He drew and colored 3 pictures and various other items. Tonight he's playing with his brothers and sisters, happily involved in a make believe game, clamoring and laughing through the house. My husband is ready to lose his mind, but the "noise" is music to my ears :)

Munchkin Mania - Bright Minds

Sooo much to blog about, soooo little time. Where do I begin? Do I talk about bright children? My momma and me the momma? "In-cog-eat-o" and other stuff I stay up at night thinking up? Or do I blog about all the... WOW... that my husband's cochlear implant has brought into my world? Hmmm... Only an hour before the bus drops the balance of my kids off at the door shattering the euphoria of coffee and naptime. Sounds like we're gonna talk about bright kids that's gonna be my catch-all term, "bright kids" you like it? I like it...Let's go!

When I say bright kids  I'm talking about the kind of kids that keep a mom up at night thinking up things like in-cog-eat-o and so forth just to stay one step ahead of the game. I have shared many conversations via facebook status that would occur in only one place on Earth...MY HOUSE! This week has been busy and we've reached some milestones. My Moxie Girl is done with diapers! Very thrilling indeed, and a lot sooner than I expected, Moxie Girl is only two years, two months old! My husband thinks this indicates that she too is a bright kid. I guess when she dragged a box over and stood on it to have her height recorded last month she was just being cute...

Little Bear learned to ride a two-wheel bike which was a very big deal for him and for me as his Momma. He has such a tough time feeling like a big boy, like part of the "First Set" and he wants to be one of them. It's really not fair this caste system my children have developed, but one has to expect that bright kids will develop a caste system. Little Bear is the first of the "Second Set" also commonly referred to as "the babies". (Note: I do not actually have "sets" of children. My husband and I have six children born over a period of eleven years.) This actually seems to put him in the lowest order of the system by my observation. He is only 16 months younger than Peach who is the last of the First Set. So the members of the first set don't feel he needs the coddling and attention, patience and understanding that the other members of the second set are given. But at the same time he is deemed unworthy to be ranked with them in all their coolness due to the immaturity he exhibits as a younger child. Learning to ride a bike means there's one more area where the field is leveled and Little Bear can join in and play with the First Set as an equal. One day I'll have to blog in detail about the caste system...anyway, yeah big victory for Little Bear!

Peach turned eight and has had so many opportunities present themselves to her this past week. I'm nervous about her growing up and remain ever conscious of my job as Momma to keep her down to Earth and teach her the proper place for all the things in her life. She recently has come to appreciate that Bookworm is kind to her above all the others. She even took the time to thank him and I can see that they have a very healthy relationship.

Report cards came home and this is an area that fills a mother of bright kids with dread. Here's a news flash for y'all: bright kids does not equal beautiful report cards 90% of the time. Yes they are in the gifted program, no that doesn't mean school is a breeze. Bookworm orchestrated a semi-elaborate scheme to get out of the Advanced Language Arts class he's in simply because he dislikes writing! He thought if he scored low enough he would get bumped down to the regular class. Two problems with that, 1) Those kids are doing writing now too, they all are! 2) I'm his Mother. He even kept track of his average so that he didn't accidentally fail the class. This is what I contend with folks. Bright kids.

Ace is struggling for the first time with a teacher who's personality conflicts with his own. She doesn't find him absolutely remarkable and fantastic. This is devastating enough for Ace, but they are caught in a power struggle as well. She wants him to conform to doing things her way and he is not a conformist. Ace feels that he can deliver the assignment to her complete and awesome just like she wants if only she would let him get there his way. So it begins with my second child entering the 'tween years!

Munchkin Mania - It's A.D.D. Darlin'

Let's cut to the chase, Little Bear has ADD. He's not one of those crazy kids bouncing off the walls, he isn't hyper. But spend enough time with him and it makes itself known. This was kinda tough for me at first, but not because I was upset that my child might not be perfect (he is still perfect I assure you) I had other ideas and experiences that made me super cautious.

First I need to tell you that my younger sister has ADD, the kind with the "H" sandwiched in there, the kind that is characterized by children who climb furniture and leave a path of destruction. So having lived with her as most siblings do, this became my idea of kids with ADD. Little Bear does not fit that description. His busy-ness is not so much of body as it is of mind. He loves to talk and never runs out of material and he finds it harder than most to focus and sit. But I thought that he was just being a 6year old boy. I found it difficult to equate his behavior with ADD because of the extreme case I had grown up knowing.

Then there's the matter of me being so well read, my husband might say "too well". You may have caught the idea that my kids are gifted or very bright. I have read quite a few professional journals discussing the misdiagnosis of ADD being placed on a child who is simply gifted. I was not interested in slapping a label on my child, even the gifted label is used with caution, it's not something I feel the need to tell everyone I meet. So yeah I was not in a hurry to jump on the teacher's band wagon when she said he might have ADD. My reaction was to refer him to the Gifted Specialist in the school for evaluation.

There was no doubt that Little Bear is gifted, however (don't you just love the "howevers") she recommended that I talk to his doctor about ADD. She is very experienced with children and with bright children and I trust her implicitly with my other brilliant minds, so I had to trust her here too. While I was waiting for his appointment to roll around Little Bear graduated from Kindergarten. It was that day, during the cap and gown ceremony that I saw it and knew in my heart that he was indeed struggling with ADD. I stood behind the rows of graduates and watched. As the program dragged on slowly all the children were losing patience and fidgeting and playing. One by one it seemed they would give up listening and enter their own much more entertaining world. However, there was one student who had been in their own world from the moment they took a seat, and that was my Little Bear. For nearly two hours I watched his antics as he did everything in his power to make staying in his seat interesting. I cried.

My tears weren't due to sadness that my child was flawed. He is not flawed, he's magnificent. My tears were sadness that I had taken so long to realize that this was in fact what was going on. He had struggled through Kindergarten and barely skated by in some areas and if I had recognized it sooner he wouldn't have had to. But I can't beat myself up for being a cautious and studious mom. It's my job to protect my kids.

We got his diagnosis over the summer, the psychologist was so kind. He said "Oh it's ADD darlin', but thankfully without the hyperactivity component." Which he related does make it more difficult to identify. Apparently I'm not the only one with preconceived ideas about kids with ADD being "high strung". Now as a mother the idea of medicating my child was not a welcome one. But I had to do what I could to help my child and I trust my pediatrician who handles Little Bear's treatment personally. No P.A.s or nurse practitioners. I have seen first hand the effects of Ritalin on my sister when the dosing wasn't proper. I have also had experience with adults who basically pretended they had ADD just to be allowed to legally take "speed".

This kind of stuff makes treatment for ADD seem scary to say the least. There is a social stigma about giving kids medicine to help their ADD meanwhile there are moms who give their kids Benedryl to make them go to sleep. This is why. Parents have misgivings about using a drug that is so closely related to an illegal substance, with due reason when one thinks about the personality altering effects drug addiction can have. This is the stuff that gets all the attention. I'm sure many parents don't realize that it's the alcohol in Benedryl that makes their kid sleep. That they could make their kids alcohol dependent. No one thinks like that because you can go into Target and buy it off the shelf. Just like you can buy liquor from a package store. The stuff they commonly use to treat ADD requires a prescription and is a federally controlled substance (Yikes!), either that or your getting it from a guy in a dark alley whose face looks like a pincushion with a goatee and 15 tattoos right? Not exactly, but you get the idea.

So there you are saying OMG this lady is advocating medicating children with ADD, giving them mind altering drugs! LOL Well yes and no. Yes I advocate prescription treatment of children with ADD under certain circumstances. No these medicines do not alter children's minds, not on the level you think. My son is still very much himself. He is still busy and an active boy. The only alteration is that he no longer has that wind-up toy quality about him. He can pay attention and play games, follow directions (because he's able to listen) and is able to block out stimuli that used to drive him to distraction. He is still a little imp! Medicine doesn't take away a child's personality.

There are alternatives to medication. Many parents manage ADD with diet. I did not explore diet for several reasons, one being that I feel diet is financially difficult to maintain. Specialized foods cost more. The biggest problem I have with diet is that in reality you have to put everyone on the same diet and that breeds resentment among siblings. You could just put one child on a diet but that would certainly make him feel like the odd man out and they already feel that way as ADD effects their interaction with their peers. Kids with ADD struggle socially as it is, no need to compound things.

There are also natural remedies that are said to help treat ADD such as the tonics sold by Native Remedies. A word of caution here, don't be so quick to believe everything you read regarding medications on sites like these because they are after all trying to sell a product. Do your own research. Natural remedies have side effects too, so be sure to do your homework. I advise you to check if Amazon.com sells a particular formula you are looking at because Amazon customers leave unbiased feedback on products which could prove invaluable. We did not chose to try natural remedies because the cost is high and there are no clinical trials to prove the effectiveness of any herbal medicinal. The FDA doesn't evaluate them. It's a lot of money to spend on a maybe. But for parents dead against medication for their child this is a very appealing alternative and probably is more cost effective and simplistic than dietary treatments.

Here's where I wrap this up all pretty like : )

If you know or suspect your child has ADD talk to your pediatrician. Even if you don't want to use medication the doctor is a valuable resource for monitoring the severity of your child's ADD and knowing whether or not they are also hyperactive (which changes the rules a bit). Do your homework, become an expert. Whichever treatment option you chose do something! Don't tell yourself he's fine or it'll go away. It won't go away, and you have no idea how deeply ADD effects a child until you start a treatment plan. You also will not know your child's full potential and abilities unless you pursue a form of treatment. I'm telling you from experience, as a mother.

Knitty Gritty - Expanding the Stitch Nation

I'm so flattered that everyone loves Moxie Girl's sweater so much that they want one! LOL I haven't even gotten to blog about it and put the pictures up here! Considering I got over 5 requests for more than 7 sweaters I would say that there are still quite a few people out there who appreciate handknits. I think that's awesome. I got one request to teach someone to knit and it got me thinking, that'd be the real gift wouldn't it?

I'd love to make sweaters for all the little girls in my life but I would rather spend twice as much time (if necessary) teaching their mommas to knit, even Becky with her ADD. The reason? If these ladies knew how to knit then the possibilities would be endless for them! I feel that fiber crafts (knitting, crochet, spinning, etc) are a dying art form. I'd love to see and know more chicks with sticks (and yarn)! It's a wonderful skill to pass on to our daughters and even our sons. You don't need a lot of equipment, it's quite relaxing, and also very gratifying.

The thing that it isn't is the one thing I hear most often... "it looks so hard!" No it's not. Looks can be deceiving. The sweater everyone adores consists of the knit stitch and the purl stitch with some slip the stitch action where you don't really do anything to the stitch except move it out of the way. 90% of knitting is done with just these three actions. Sometimes there are variations but only sometimes. So don't say it's too hard girls. Give it a go!

It's not expensive, nice yarn is $3 something at Wal-Mart for a skein (ball) big enough to produce two or more hats. Never buy redheart yarn for someone you love including yourself! LOL Experienced chicks with sticks know that redheart is the yuckiest feeling yarn on earth! The sticks (knitting needles) are less than $8 a pair and will last for decades making each set a good investment. Ravelry.com has an abundance of free knitting patterns, and you're ready to give it a go!

I know what you're going to say next "but I'm not talented like you". I'm not picasso folks. If you follow the directions and steps you can knit as well as me or anyone else. It's not that kind of craft. I honestly think they could probably teach monkies to do it. Blind people can and do knit. No blind people don't have anything more in common with monkies than the next person this is just the order of my thoughts. Actually that sweater is only the second finished knitted object I've made. I felt like I could handle it so I tackled it. You'll be able to gauge your own abilities once you actually start knitting. Of course you will never know unless you actually try to knit. Like I told Gabbie "hard work beats talent when talent doesn't work hard". It's all about effort...So give it a go!

Oh wait I understand... you don't have time to learn or time to sit and make sweaters or socks...AND I DO?? LOL I do little bits in the evenings to relax and unwind. Sometimes I'll hook up my bluetooth and chat on the phone while plugging away at a project. I might sneak it with me to the park or doctor's office, or play place at the mall, tucked inside a Vera tote of course! It can be really fun, and relaxing and it passes time beautifully :) I don't want you all saying how you wish you could do it...YOU CAN DO IT! I'd love to inspire some of you to give it a go!

So here's my big confession. Absolutely everything I know about knitting I learned from Amy Finlay's videos on knittinghelp.com. Girlfriend's honor! She taught me how to knit and purl, how to finish projects and how to fix mistakes and save my sanity... twice while making Josie's sweater I slipped over to her website to learn (as in for the first time ever) how to do a couple of finishing touches. I am an English knitter, also called a thrower due to the movement of the yarn. I almost always use the continental (or long tail) cast on though, because I think it's most efficient. But you can start off with a regular backward loop cast on if the other method intimidates you. Notice the links? I'm trying to make this as easy a possible *wink* Gabbie has been knitting since she's 6 girls...and she's left handed! I think you've got this! So once again I say give it a go!

I'm only a phone call, e-mail, text message, or facebook post away! If need be I have ways of connecting you with knitters in your area...I am dead serious. Make your daughter a scarf, then make her a hat, then you'll have the skills needed to make her a sweater... I promise! You'd all make your mothers so proud! LOL Or at the very least yourselves, and my how your daughter will love to wear and show off the things her mommy made her! They quickly become treasures.
